Cascade can be used for bittering, aroma, and finishing additions. It is especially valuable for dry-hopping additions if desired. You can use it to make American Ale, Porter, Strong Ale and Barleywine. Substitutes include Amarillo, Centennial, and Columbus.
The Cascade hop comes from a United States-bred seedling of English Fuggles. It is especially linked with American West Coast craft beer. It has a pleasant but strong spicy, floral, citrus aroma and flavor. It provides a soft bitterness.
