Dried Elderflowers 2 Oz
The white or whitish-yellow flowers of all species and varieties of elder are pleasantly fragrant and impart a muscat flavor to wines, ciders and vinegars.
For tea, steep 1 tsp. of elderflowers in a cup of water for 10 minutes. For wine, use 1 oz, dried elderflowers, 24 oz, of grape concentrate and 1/2 lb of cane sugar. Add 2 tsp. f acid blend, 1 tsp of yeast energizer and water to 1 gallon. Use Red Star Champagne or Premiere Cuvee yeast. For ease of removal add the flowers in a straining bag.
